Ashley is a talented baker/cake decorator so her answer to question #6 came as no surprise, however, I was surprised to read her answer to question #9! In memory of PAUL PHELPS SR., ROBERT PHELPS wanted to share this recipe for Paul's Mayo Cake! In Robert's words, "I just wanted to preserve this recipe because it is sooo good and it was written in his own hand, his own way. The way he lived I guess!" Mayo cake dates back to WWII when ingredients commonly used in baking were hard to come by. Bakers had to get creative and, in doing so, this unique cake was born! It's super easy to throw together -which is probably why Paul loved it so much! If super easy isn't your thing you could always make things a little more complicated by making your own mayo, but Paul just used store-bought! Either way, you're sure to get a deliciously moist cake served with a side of nostalgia! (By the way, the recipe was hard to read so if you notice an error in it please let me know in the comments section below so that I may correct it! Oh and if you have a picture of the cake please feel free to share that too!) Paul's Mayo Cake (Do you know what size pan Paul always used? Write it in the comments section below so that I can add it here!) 2 c. AP or cake flour 1 c. granulated sugar 1 c. mayo 1 c. warm water 4 tblspn. (1/4 c.) cocoa powder 2 tsp. baking soda 1 tsp. vanilla (OPTIONAL: This cake is so moist that you don't really even need frosting but, if you want, you can certainly add your favorite kind of frosting on top!) 1. Preheat your oven to 350 degrees and get a pan ready for the batter by greasing and flouring it. (OPTIONAL: You could also line the pan with parchment paper, or you can even grease the pan and shake around some cocoa powder, instead of flour, if you desire a more clean looking cake.)
2. Combine all ingredients in a medium-sized bowl and mix until the batter comes together. 3. Pour batter into your pan and bake for about 30 minutes or until a toothpick, poked in the center, come outs clean. Enjoy! |
